Turkey stew with Roquefort Société sauce

If you don't have any Société Roquefort , you can use : Stilton or Sancy Bleu d'Auvergne
Slowly brown the turkey cubes in oil and butter in a casserole dish. Salt and pepper to taste. Dust with flour, stir well and cook for two minutes. Add the chicken broth, white wine, herbs and spices, and the vegetables. Mix well. Cover and let slowly simmer for 70 minutes. Remove the celery stick and bay leaf. Remove the turkey cubes and vegetables from the broth and set aside in a deep bowl but keep warm. Reheat the broth and reduce for a couple of minutes on high heat. Reduce heat to a simmer. Break the cheese into crumbs and add to the cream. Pour mixture into broth while continuing to stir.
- 100g (3 1/2 oz) of Roquefort Société
- 2 tbsp (30ml) butter
- 1 tbsp (15ml) olive oil
- 2 lb (900g) turkey breast filet, diced into 4cm cubes (1 ½")
- Salt and pepper, to taste
- 2 tbsp (30ml) flour
- 3 cups (750ml) chicken broth
- 1 cup (250ml) white wine
- Half a celery stick with 2 cloves
- 1 bay leaf
- 1 tbsp (15ml) chopped parsley
