Spinach Penne

Cook the pasta until al dente.
Melt butter in a large skillet. Sauté garlic and onion over high heat for 2 minutes, stirring. Warm the cream, pour it over, and add nutmeg. Bring to a boil, season with salt and pepper, add spinach. Remove from heat.
Add the drained pasta to the cream sauce. Beat in the egg. Reheat over low heat. Add Parmesan cheese and stir until it has melted.
- 700 g fresh spinach, washed, blanched, chopped
- 450 g penne pasta
- 30 ml butter
- 3 cloves garlic, minced
- 1 onion, fi nely chopped
- 350 ml light cream
- 1 ml nutmeg
- Sea salt and freshly ground black pepper, to taste
- 1 egg, beaten
