Salmon "au gratin" with Jarlsberg and a "fine-herb" mousseline

If you don't have any Jarlsberg, you can use : OKA L'Artisan or OKA
Combine all ingredients except the whipped cream in a bowl. Slowly blend in whipped cream with a spatula. Set aside. In a large non-stick pan, melt the butter into the oil over medium-high heat. Place the salmon filets in the pan and cook for three to five minutes per side. Season with fresh ground pepper and cover with thin slices of cheese. Prior to serving, cook the filets in the oven for three to five minutes until cheese has melted and become lightly golden. Serve with a generous spoonful of fine-herb mousseline. Garnish with a sprinkling of fine herbs, if desired.
- Salmon ingredients:
- 4 slices of Jarlsberg
- 1 tbsp (15ml) butter
- 1 tbsp (15ml) olive oil
- 4 fresh Atlantic salmon filets
- Fresh ground pepper, to taste
- Fresh herb bouquets (optional)
- Fine herb mousseline ingredients:
- 3/4 cup (180ml) mayonnaise
- 2 tbsp (30ml) fresh lemon juice
- 3 tbsp (45ml) fresh dill, chopped
- 2 tbsp (30ml) fresh chives, chopped
- 2 tsp (10ml) lemon zest, grated
- Fresh ground pepper, to taste
- 3/4 cup (180ml) whipped cream
