Penne with Pesto

Ingredients :
Puree basil and pine nuts using a food processor with 1/3 of the olive oil. Stir in the remaining oil, grated cheese, garlic and season to taste.
Cook pasta until al dente. Drain pasta and mix with pesto.
Divide arugula between plates, and add pasta. Garnish with freshly shaved Parmesan cheese and cherry tomatoes.
- 500 ml fresh basil leaves, chopped and packed
- 75 ml pine nuts
- 150 ml extra virgin olive oil
- 3 cloves garlic, minced
- Sea salt and freshly ground black pepper, to taste
- 450 g penne pasta
- 110 g arugula, rinsed and dried
- 8 cherry tomatoes, halved; for garnish
