OKA L'Artisan Onion Soup

If you don't have any OKA L'Artisan, you can use : Jarlsberg or OKA

Peel and finely slice onions. Heat butter and olive oil in a large, thick-bottom pan. Add onions and leeks, then cook over medium heat 15 minutes until translucent and slightly browned. Powder onions with flour and cook 2 minutes.

Reduce heat, add broth and Worcestershire sauce, and cover. Let simmer for 15 to 20 minutes. Season with salt and pepper to taste. Add Port and stir well.

While soup is cooking, toast bread slices.

Pour soup into 4 ovenproof bowls and top with a slice of bread. Cover with grated OKA L'Artisan. Place bowls under broiler to brown cheese. Serve immediately.

  • 6 ounces (175 g) OKA L'Artisan cheese, grated
  • 2 large yellow onions
  • 1 large red onion
  • 1 cup (250 mL) leeks, minced
  • 3 tbsp (45 mL) butter
  • 2 tbsp (30 mL) olive oil
  • 1 tbsp (15 mL) flour
  • 4 cups (1 litre) beef broth
  • Salt and pepper to taste
  • 3 tbsp (45 mL) port
  • 4 slices of bread
  • 1 tbsp (15 mL) Worcestershire sauce
