OKA Cheese with tomato and artichoke Bruschetta

If you don't have any OKA Classique, you can use : OKA with Mushrooms or OKA L'Artisan

Cut the baguette into 24, hlaf-inch in (1 cm) slices. Brush with olive oil and grill on both sides. Finely chop the tomatoes, artichoke hearts and green onion. Mix these ingredients well. Salt and pepper. Add a dash of olive oil and a dash of balsamic vinegar. Mix well. Spread this mixture on the slices of bread and
add a slice of OKA to each. Grill in the oven for 2 to 4 minutes.
Pepper again and garnish with fresh basil cut in thin strips.

  • 6 oz (170 g) Oka cheese
  • 1 baguette
  • 3 tblsps (45 ml) olive oil
  • 2 ripe tomatoes
  • 3 artichoke hearts
  • 1 green onion
  • Dash of olive oil
  • Dash of balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil to garnish
