Exotic Chèvretine Omelette

If you don't have any Unripened Chèvretine, you can use : Rondoux Pure Goat or Chevrita
Beat the eggs and cream in a bowl. Salt and pepper to taste. Add the green onion, chives, mint and half the Chèvretine Goat cheese. Whisk until blended. Heat the oil and butter in a frying pan. Pour in egg mixture. Cook covered over low heat for five to seven minutes. Add almonds, tangerines and balance of the Chèvretine Goat cheese. Cover and cook for two more minutes.
- One Chèvretine Grand Palet Goat cheese
- 2 tbsp (30 mL) old-fashioned
- 18% cream
- Salt and pepper to taste
- 1 green onion, sliced
- 8 eggs
- Fresh asparagus
- 1/2 tbsp (7.5 mL) chives, finely minced
- 2 tsp (10 mL) fresh mint, finely minced
- 1 tbsp (15 mL) butter
- 1 tbsp (15 mL) olive oil
- 1/4 cup (60 mL) slivered almonds, roasted
- 1/2 cup (125 mL) whole segments of tangerines
