Crème OKA with Parsley Pesto

1. Mix the pesto ingredients together in a bowl, then let them sit at room temperature for at least 20 minutes for the flavours to blend.
2. Grill the mini naans or mini pitas in a very hot ridged skillet for about 30 seconds on each side, or simply toast them in a toaster oven.
3. Arrange the mini breads on a platter and spread them generously with Crème OKA.
4. Place a good dollop of pesto on top of each piece of bread, then serve with the lemon quarters on the side.


Ingredients :
  • 8 mini naans or 12 mini pitas
  • 1 package Crème OKA
  • a few lemon quarters
  • 250 mL (1 cup) Italian parsley, chopped
  • 125 mL (1/2 cup) roasted walnuts, coarsely chopped
  • ½ clove garlic, finely chopped
  • 80 mL (1/3 cup) extra virgin olive oil
  • juice of ½ lemon
  • zest of 1 lemon
  • 2.5 mL (1/2 teaspoon) salt
  • 2.5 mL (1/2 teaspoon) freshly ground pepper
