Crème de Brie L’Extra cucumbers and tomato salsa

Using a mandolin, finely slice the cucumbers along their length. Salt and allow to rest approximately 5 minutes, long enough for the cucumber slices to soften and become easier to roll.
In a bowl, mix the tomatoes, pesto, shallot, and mint. Season.
Put a spoonful of tomato salsa on each cucumber slice. Roll each slice and stand the rolls on their ends.
In the microwave oven, heat the Crème de Brie L’Extra 10-20 seconds or until the cheese is runny. Using a little spoon, coat the top of each roll. Garnish with salsa and serve.

- 3 Lebanese cucumbers
- 2 Italian tomatoes, cored and thinly diced
- 45 ml (3 Tbsp) dried-tomato pesto
- 1 small shallot, finely chopped
- 5 ml (1 tsp) fresh mint
- ½ 100-g container Crème de Brie L’Extra
- Salt and ground pepper
