Chèvretine over Penne

If you don't have any Chèvretine Petits Chèvres Doux, you can use : Chevrita or L'Extra Pure Goat
Heat the oil in a frying pan. Add onions and cook over high heat until translucent. Add mushrooms and peppers.
Sauté these ingredients before adding crushed tomatoes, balsamic vinegar, coriander, salt and pepper. Mix well. Simmer uncovered over low heat for five minutes. Add crumbled cheese and serve immediately over warm pasta.
- 3 1/2 ounces (100 g) Chèvretine cheese
- 2 tbsp (30 mL) olive oil
- 1/2 cup (125 mL) onions, sliced into strips
- Salt and pepper
- 1 tbsp (15 mL) Balsamic vinegar
- 1/2 cup (125 mL) red bell pepper, cut into strips
- 1/2 cup (125 mL) green bell pepper, cut into strips
- 1/2 cup (125 mL) yellow bell pepper, cut into strips
- 1 can 398 mL crushed tomatoes*
- 1 cup (250 mL) mushrooms, quartered
- 2 tbsp (30 mL) coriander, minced
- 1 lb (500 g) penne pasta, cooked
