Chèvretine Goat Cheese Pizza

Preheat oven at 375°F (190°C). Sauté the garlic and shallots in oil in a frying pan, heat oil. Add spinach leaves. Salt and pepper to taste. Sauté two to three minutes. Spread mixture evenly over pizzas crust.
Add tomatoes and add salt to taste. Add cheese slices, black olives, basil and pepper from the mill. Bake 15 minutes. Finish under grill two to three minutes.


Ingredients :
  • 7 ounces (200 g) Chèvretine Sainte-Maure, sliced thin
  • 2 tbsp (30 mL) olive oil
  • 1 garlic clove, finely minced
  • 2 French shallots, finely minced
  • Salt and pepper to taste
  • 5 1/2 ounces (150 g) frozen spinach leaves
  • 4 precooked 100 g pizza crusts
  • 2 tomatoes, sliced thin
  • 10 black olives, stoned, cut in 2 lengthwise
  • 1 tbsp (15 mL) basil, freshly minced
