Chèvretine Goat Cheese California Salad

If you don't have any Unripened Chèvretine, you can use : Rondoux Pure Goat or Chevrita

Roll Chèvretine goat cheese rounds into sesame seeds.
Arrange the cheese rounds on Paris Toasts and set aside.

Mix the lettuce, green onion, basil and thyme in a bowl adding salt and pepper to taste. Broil the Paris Toasts in the oven until the cheese melt. Combine dressing ingredients in a jar and shake well. Serve each guest salad garnished with six cantaloupe balls and three Paris Toasts in the center of the plate, the whole drizzled with one tablespoon of dressing.

  • 4 oz (113 g) Chèvretine goat cheese, sliced into 12 rounds
  • 1/4 cup (60 ml) sesame seeds
  • 12 Paris Toasts
  • 5 oz (125 g) mesclun lettuce
  • 1 green onion, finely chopped
  • 2 fresh basil leaves, finely chopped
  • 2 fresh thyme stems, finely chopped
  • 24 cantaloupe melon balls
  • Salt and pepper to taste
  • Ingredients for dressing:
  • 2 tbsps. (30 ml) sesame oil
  • 1 tbsp. (15 ml) lemon juice
  • 1 tbsp. (15 ml) honey
