Chèvretine Cheese Tartlets

If you don't have any Unripened Chèvretine, you can use : Rondoux Pure Goat or Chevrita
Blend the Chèvretine cheese, beaten egg, half-and-half cream,
and salt. But do it gently by hand so the cheese doesn't overmix and get too soft.
Carefully fold the chives and sundried tomatoes into the cheese.
Overmixing will make a pink filling. Fill a pastry bag with the mix.
Pipe the mixture into store-bought tartlets or use a spoon to fill the shells.
Fill them just over the top edge. Bake the tartlets for
12 to 15 minutes in a 400°F (205°C) oven. Top with sprigs of chives.
- 2 cups (400 g) Chèvretine cheese
- 1/2 tsp (5 ml) salt
- 3 tbsp (45 ml) half-and-half cream
- 1 large egg
- 1 tbsp (15 ml) chives, finely chopped
- 1/4 cup (50 g) sundried tomatoes, chopped
- 12 tartlet shells (3 inches each)
