Chèvretine Cheese Puffs

If you don't have any Unripened Chèvretine, you can use : Rondoux Pure Goat or Chevrita
Preheat oven to 425°F (210°C). Roll out dough over
counter to form a 6" x 11" (15 x 28-cm) rectangle. Cut
into 8 squares; spread over baking pan. Place a disc of Chèvretine in the center of each square; sprinkle with
thyme. Spread 3 apple slivers over cheese in a fan shape;
coat lightly with oil. Add salt, pepper and chopped pecans.
Bake 10 to 20 minutes.
- 4 oz (113 g) of Chèvretine Cheese cut into 8 discs
- 7 3/4 oz (220 g) puff pastry dough, rolled-out
- 1 apple, thinly sliced, lightly coated with lemon
- 1 teaspoon (5 mL) vegetable oil
- 1 teaspoon (5 mL) fresh thyme, chopped
- 1 tablespoon (15 mL) chopped pecans
- Salt and pepper to taste
