Chèvre des Alpes Cheese with Cranberry Biscotti, Cranberry Compote and Kumquat Slices

CRANBERRY BISCOTTI

1. Preheat the oven to 200°C/400°F.
2. Sift the flour, baking soda, and salt together.
3. Beat the oil and sugar together, then add the eggs and the orange zest.
4. Gently mix the dry ingredients into the wet ones, then fold in the cranberries.
5. Place the dough on a parchment-covered baking sheet, then use your hands to shape the dough into a 30 cm x 10 cm (12’’x4’’) log.
6. Bake the log in the centre of the oven for 40 minutes, then remove from the oven and allow to cool for 15 minutes.
7. Cut the log into slices 1.25 cm (1/2”’) thick, set them back on the sheet, then bake for another 15 minutes.
8. Remove the sheet from the oven and let the biscotti cool completely before you remove them.

CRANBERRY COMPOTE

1. Place the teabags in the water, add the syrup, bring the mixture to a boil, then lower the heat by half and remove the teabags.
2. Add the cranberries and salt. Stir the cranberries until they are well coated with the syrup, then cover and simmer for 5 minutes.
3. Allow compote to cool completely before using.

Serve Chèvre des Alpes cheese on an attractive platter with cranberry biscotti, a dash of cranberry compote, and kumquat slices.

  • 2 packages Chèvre des Alpes cheese
  • Biscotti (recipe follows)
  • Cranberry compote (recipe follows)
  • 10 kumquats, sliced

  • 80 mL (1/3 cup) olive oil
  • 180 mL (3/4 cup) sugar
  • 2 eggs
  • 500 mL (2 cups) flour
  • 2.5 mL (1/2 teaspoon) salt
  • 5 mL (1 teaspoon) baking powder
  • 125 mL (½ cup) dried cranberries
  • 125 mL (½ cup) fresh cranberries
  • zest of one orange
  • CRANBERRY COMPOTE
  • 750 mL (3 cups) fresh or frozen cranberries
  • 2 bags of Earl Grey tea
  • 125 mL (½ cup) maple syrup
  • 125 mL (½ cup) water
  • 1 pinch of salt
