Champfleury & Jam Crostinis

If you don't have any Champfleury, you can use : Providence or La Rougette
Place the toasted slices on a non-stick cookie sheet and top with slices of Champfleury cheese. On 6 of the toasted bread slices, place about 5 ml (1 tsp) of apricot jam. Repeat with the remaining with the remaining toasted bread slices and jams. Just before serving, put the cookie sheet in a 200ºC (400ºF) preheated oven for 2 or 3 minutes until the cheese begins to melt. On 6 appetizer plates, place 3 crostinis, one from each jam variety. Garnish with edible nasturtium leaves and flowers as desired.
- 18 slices of Champfleury cheese
- 18 slices of bread (grain, nut, raisin and nut or other), diagonally cut and lightly toasted
- 60ml (1/4 cup) apricot jam
- 60ml (1/4 cup) cherry jam
- 60ml (1/4 cup) blackberry jam
- Edible nasturtium leaves and flowers (optional)
