Champfleury Cheese with Pears Poached in Red Wine

1. Setting the pears aside, place all the other ingredients in a large saucepan and bring them to a boil.
2. Peel the pears, place them gently in the boiling liquid, and lower the flame to simmer immediately.
3. Let the pears simmer for 30 minutes, turning them every 10 minutes.
4. Cover the saucepan, remove from the flame, and allow the pears to cool in the liquid for 3 hours, turning them every 30 minutes.
5. Once the pears have cooled, remove them from the liquid and cut them in half. Serve each pear half with ¼ of the round of Champfleury cheese, a torn-off piece of baguette, and plenty of pride.

  • 1 package Champfleury cheese
  • 1 baguette
  • 4 Bosc pears
  • 750 mL (3 cups) red wine
  • 500 mL (2 cups) water
  • 180 mL (¾ cup) sugar
  • 1 bay leaf
  • 1 strip of orange peel
  • 1 star anise
