Brie Vaudreuil supreme spinach salad

If you don't have any Brie Vaudreuil , you can use : Brie L'Extra or Le Roy Brie
Peel orange quarters, separate, and cut in two. Put the orange pieces, green grapes, almonds and tarragon in a salad bowl and toss. Cut the brie into approximately 16 equal pieces. Arrange the spinach leaves on a serving plate and add the other ingredients. Add the brie on top. To prepare the dressing, put yogurt, parsley, orange juice, garlic, salt and pepper into a food processor and reduce to a purée. Drizzle dressing over salad and toss gently. Serve with nut bread.

- 7 oz (200g) Brie Vaudreuil cheese
- 6 oz (170g) spinach leaves, coarsalty cut
- 2 oranges, cut into halved quarters
- 20 green grapes, halved
- 1 1/2 oz (40g) minced almonds
- 1 tsp (5ml) finely chopped fresh tarragon
- Ingredients for dressing:
- 6 1/2 oz (175g) plain yogurt
- 1 tbsp (15ml) fresh parsley
- 2 tbsp (30ml) orange juice
- 1 garlic clove
- Salt and pepper to taste
