Brie L'Extra & roast beef croissant

If you don't have any Brie Vaudreuil , you can use : Brie L'Extra or Le Roy Brie
Sauté cabbage, green onion and parsley in oil in a frying pan for three minutes. Salt and pepper to taste. Pour out and let cool. Add dill to mayonnaise and mix well. Cut croissants open and spread with mayonnaise mix. On bottom, add cabbage mixture and cucumber slices. Salt and pepper to taste. Add roast beef or smoked meat and cheese. Top with second half of croissant. Serve with raw vegetables.
- 7 oz (200 g) Brie L'Extra cheese cut into 4 slices
- 4 croissants
- 1/2 lb. (250 g) cooked Roast Beef or Smoked meat, thinly sliced
- 2 tbsps (30 mL) Olive oil
- 2 cups (500 mL) shredded red cabbage
- 1 green onion, finely minced
- 1 tbsp (15 mL) freshly minced parsley
- 1/2 cucumber thinly sliced
- 1/4 cup (60 mL) mayonnaise
- 2 tbsps (30 mL) finely cut dill
- Salt and pepper to taste
