Brie L'Extra cheese pizza with asparagus and smoked turkey breast

If you don't have any Brie L'Extra , you can use : Brie Claudel or Brie Vaudreuil

Preheat oven to 400°F (200°C). In a large non-stick frying pan, cook and stir red onions in butter until tender (about 10 minutes).

Reduce heat to medium-low, sprinkle sugar over onions, and continue cooking until golden, stirring occasionally. Garnish pizza crust with pesto, cooked onions, turkey breast and cheese. Place the asparagus in a star shape on the pizza.

Bake eight to 10 minutes or until hot and cheese is melted.
(Note that brie does not brown and becomes almost transparent during the cooking process.)

  • About 7 oz (200 g) Brie L'Extra cheese, cut in strips
  • 2 medium red onions, cut into thin wedges
  • 3 tbsp (50 mL) butter
  • 1 tsp (5 mL) sugar
  • 1 pizza crust (12 in. / 30 cm)
  • 2 tbsp (25 mL) pesto
  • 1/4 lb (125 g) smoked turkey breast, thinly sliced
  • 10 stalks asparagus, blanched or canned, drained
