Brie L'Extra Cheese and Pesto in Phyllo Pastry

If you don't have any Brie Vaudreuil , you can use : Brie L'Extra or Le Roy Brie

Preheat oven to 375°F (190°C). Stack 4 sheets of Phyllo dough together, brushing each with melted butter. Cut into 24 squares. Place them in mini muffin tins.

Repeat with the 4 other sheets, then place in each muffin tin so they are well covered. Brush with Pesto.

Divide the red pepper equally into each cup. Salt and pepper. Cut the Brie L'Extra cheese into 24 equal pieces. Place each piece in the mini muffin tins and garnish with pine nuts. Bake for 8 to 10 minutes. Garnish with chopped chives. Serve hot or at room temperature.

  • 6 oz (170 g) Brie L'Extra cheese
  • 8 sheets of Phyllo dough
  • 6 tblsp (90 ml) melted butter
  • 1/2 cup (125 ml) roasted red pepper, cut in large pieces
  • 3 tblsp (45 ml) Pesto
  • Salt and pepper to taste
  • 1/2 cup (125 ml) roasted pine nuts
  • Chopped chives
