Champfleury

Ideally
This very creamy cheese, with an assertive character and a fine orange-coloured crust, requires a smooth, generous white wine that can envelop its unctuous character and stand up to its flavours. There's nothing better than a pinot gris from Alsace to fit the bill. Its unctuousness blends perfectly with the cheese's texture. You can choose it dry or semi-dry, as you wish. A gewürztraminer, from Alsace or elsewhere, will also provide an excellent companion, as long as it is not overly powerful.

Alternatives
An ice cider creates a very pleasant pairing here, full of freshness.
If you enjoy sipping on brandy after a good meal, let yourself be tempted by a Poire Williams or a plum brandy, which achieve an unusual harmony with Champfleury.

To be avoided
- Light white wines with sharp acidity, as well as sparkling wines.
- Red or white wines with a very noticeable woodiness.
- All red wines! But if you want to try, choose fruit-filled sunny wines that are supple and low in tannins, such as a primitivo from Apulia in Italy, an aragonez from Alentejo in Portugal or a zinfandel from California.
