
Raclette parties: Go for variety
To prepare their Raclette feasts, Swiss herders would serve whatever food they had at hand. Nowadays it is not uncommon to see Raclette served with pickles, potatoes, marinated onions, dried meats, bell peppers, tomatoes, and even pears. When cooking on a Raclette grill, let yourself be tempted by cubes of beef or chicken, shrimp, even the vegetables you like to grill. Always remember, anything goes!
In Switzerland, Raclette is enjoyed with a local wine called “Fendant.” According to purists, drinking water or any non-alcoholic beverage would compromise one’s digestion of the cheese!
If you do not have easy access to a “Fendant,” choose a smooth and lightly fruity white wine such as a Riesling, a Savoie or a Pinot gris.
